Ideally these control points should include all steps or procedures involved in food handling from farm to fork, including food production, storage, transportation, delivery, and consumption. Unfortunately current food safety and its monitoring and assessment practices do not meet expectations, mostly due to the high cost of traditional laboratory tests and time consuming operations requiring expensive equipment and specialised trained professionals.
