Food safety primarily concerns biological, more precisely microbiological objects, namely, viruses, pathogenic bacteria (salmonella, listeria, etc.) and fungi (mycotoxins), the analysis of which requires cheap, specific and fast methods. This article covers the essence of ELISA - enzyme-linked immunosorbent assay methods, as well as PSR - polymerase chain reactions, their varieties and advantages in comparison with traditional methods of analyzing microorganisms that pose a certain danger to human health (through food products) and animals (through feed).
