Table 4 summarizes peptide quantification obtained when supernatants and concentrated fractions were incubated with β-casein as substrate. Results ranged from 39 to 110 µg of 11-mer peptide/mL, with the highest value corresponding to supernatants and fractions obtained from the growth of probiotic CECT 7210 with maltose as sole carbon source (90 and 110 µg peptide/mL, respectively).
