Morphology and characteristics of intestinal mucosa together with intestinal immune cells are constantly changing dependent on the food composition. A large number of pathogens, entering the body through the intestinal mucosa, are rapidly eliminated by protective mucosal immune responses. Otherwise, the intestine is normally home to many different commensal bacteria, continuously exposed to food proteins. As a result, the intestinal immune system must be able to discriminate harmless antigens from harmful ones (Wilson et al., 1996) .
